2017 De Chaunac
The 2017 DeChaunac was machine harvested on 9/21 at 18 Brix and with a pH of 3.37. The fruit was crushed, de-stemmed and inoculated with BRL97. The primary fermentation lasted 4 days. Towards the end of the primary fermentation, the wine was co-inoculated with malolactic bacteria.
Of all of Tabora's French-American hybrid wines, the 2017 DeChaunac is the darkest in color. The wine is more floral in aromatics with notes of violet and darker fruit tones of fig. There is a slight gamey scent on the back end of the nose. The palate is medium in body with moderate acid. Prevalent notes of plum lead the palate followed by a lasting and tart finish.
